The Certified Master Chef (CMC) is the highest level of certification offered by the American Culinary Federation (ACF). It represents the pinnacle of culinary expertise, demonstrating mastery of advanced cooking techniques. To achieve this distinction, chefs must first hold a Certified Executive Chef (CEC) or Certified Executive Pastry Chef (CEPC) certification. They then undergo an intensive eight-day practical examination, evaluated by peers, which tests their skills in various culinary areas. The CMC exam covers competencies such as buffet catering, classical cuisine, freestyle cooking, global cuisine, baking, and pastry. Candidates must also complete specific educational courses in wine, human resources, advanced sanitation, and cost control. The certification process is rigorous, requiring both financial support and a letter of recommendation from a current CMC.
