Chocolate is a food derived from ground roasted cacao beans, widely consumed as candy, used in beverages, and added as a flavoring or coating for confections and baked goods. It was introduced to Europe by Hernán Cortés after visiting the court of Montezuma II, where he encountered a bitter cacao-bean drink called xocoatl. Chocolate production involves fermenting and roasting cacao beans, then grinding them into a paste called chocolate liquor. This liquor can be hardened to form baking chocolate, pressed to make cocoa powder, or mixed with sugar and cocoa butter to create sweet chocolate. Types of chocolate include milk chocolate, made with cocoa solids, milk, and sugar; dark chocolate, which contains more cocoa solids and less sugar; and white chocolate, made from cocoa butter, sugar, milk, and vanilla, lacking cocoa solids. Chocolate is rich in carbohydrates and fat, providing quick energy. It has become a staple in many cultures, used in various desserts like Spanish churros con chocolate. The chocolate industry has significant environmental and social impacts, with issues such as deforestation and labor concerns. Despite these challenges, chocolate remains a beloved treat worldwide.
