Established in 1879 by Charles Gage, it initially operated at 302 Fulton Street before moving to its current location at 372-374 Fulton Street in 1889. The restaurant is renowned for its Neo-Grec facade and ornate interior, reflecting the late Victorian Era. It became a staple for Brooklyn's elite, including judges and politicians, who frequented it for its oysters and other seafood delicacies. Today, Gage & Tollner operates as an oyster and chop house under the management of Sohui Kim, Ben Schneider, and St. John Frizell. The restaurant reopened in 2021 after a crowdfunding campaign and renovations. It maintains its historic charm while offering contemporary cuisine with a focus on fresh seafood and traditional dishes. The restaurant's interior is preserved as a New York City landmark, providing a unique dining experience with its vintage decor and classic cocktails.
