It is crafted by Acetaia Leonardi, a family-owned estate in Modena, Italy, which has been producing balsamic vinegar since 1871. The vinegar is made from cooked grape must, primarily from Lambrusco and Trebbiano grapes, which are hand-harvested and gently pressed to preserve their delicate flavors. The must is then cooked in a copper cauldron to concentrate its sugars and flavors. Aged for 30 years in a series of wooden barrels, including oak, chestnut, and cherry, Leonardi Il Patriarca develops a complex and layered flavor profile. It features aromas of apple and pear tart with hints of chestnut honey and molasses. The vinegar is rich and full-bodied, with sweet and sour notes of raisins, red currant, black figs, and cherries. It is ideal for enhancing a variety of dishes, from appetizers to desserts, and can be enjoyed as a digestif or used as a finishing element for grilled meats and fritto misto.
