Maytag II, in collaboration with Iowa State University, as an attempt to replicate the French Roquefort cheese. The cheese is made from the milk of local Holstein cattle and is known for its distinctive green veining, achieved by adding Penicillium Roqueforti spores. Maytag Blue is aged in caves, which provides it with a moist and creamy yet crumbly texture.
