Jerez is a type of fortified wine that originates from the Jerez region in southwestern Spain. The resulting wine is characterized by its golden color, nutty and oxidative aromas, and flavors that range from sweet to dry. Jerez is often described as having a velvety texture and a long, satisfying finish. The production of Jerez is a labor-intensive process that involves a series of carefully controlled steps. The grapes are harvested at the optimal time, and the must is fermented in stainless steel tanks to preserve the delicate flavors and aromas. The wine is then transferred to American oak barrels, where it undergoes a process of oxidative aging, which involves exposing the wine to air to develop its characteristic flavors and aromas. The barrels are regularly topped up with a small amount of wine to prevent oxidation, and the wine is monitored regularly to ensure that it meets the high standards of the Jerez Denomination of Origin.
