Virgilio Martinez Virgilio Martínez Véliz is a renowned Peruvian chef and restaurateur, celebrated for his innovative approach to Peruvian cuisine. Born on August 31, 1977, in Lima, Peru, Martínez initially pursued a career in law and was an avid skateboarder before turning to cooking. He studied at Le Cordon Bleu in Ottawa and London, gaining experience at prominent restaurants like Lutèce in New York and Can Fabes in Spain. His culinary journey led him to become the executive chef at Astrid & Gastón in Bogotá and Madrid. Martínez is best known for his flagship restaurant, Central Restaurante, located in Lima. He emphasizes the use of indigenous Peruvian ingredients, incorporating modern techniques to create a unique culinary experience. His menu often features potatoes grown at high altitudes, kushuru, and wild quinoa varieties. In 2013, he co-founded Mater Iniciativa, an interdisciplinary group dedicated to discovering and promoting Peruvian ingredients. Martínez has also opened other restaurants, including Senzo in Cusco and Lima in London and Dubai. His work has been recognized globally, earning Central the title of Best Restaurant in Latin America and a top spot in The World's 50 Best Restaurants list.
