Ryan Chetiyawardana, known as Mr. Lyan, is a pioneering mixologist celebrated for his innovative approach to sustainability in the cocktail industry. Born in Birmingham to Sri Lankan parents, he developed a passion for food and drink early on. Chetiyawardana studied fine arts at Central Saint Martins and biology and philosophy at Edinburgh University, which influenced his creative and scientific approach to bartending. He began his career as a chef before transitioning to bartending, where he found a perfect blend of creativity and interaction. Chetiyawardana's bars, including White Lyan, Dandelyan, and Lyaness, have been acclaimed for their unique concepts. White Lyan was the first bar to use no perishables, showcasing his commitment to sustainability. Dandelyan, which became Lyaness, explored botanicals, while Cub emphasized experimental dining. His work has earned numerous awards, including International Bartender of the Year. Chetiyawardana continues to inspire with his focus on sustainable practices and innovative cocktail menus, pushing the boundaries of mixology worldwide.
